Lemon Rice is a type of rice preparation using flavours of lemons. Recipe is not just quick and easy but also perfect for tiffin box. This recipe does not require any onions or garlic hence can be stored for a long time at room temperature which makes it ideal lunch box recipe for long travel journeys.
Lemon rice can be prepared in jiffy thus its absolutely ultimate recipe for the busy days of the week. So, let’s jump to my recipe of Lemon rice !!
1 tsp cumin seeds
1 tsp urad daal
1 tsp mustard seeds
1/2 tsp turmeric powder
Few curry leaves
Handful of coriander leaves
Pinch of asafoetida
2-3 dry red chilies
1/2 cup of dry peanuts
2 cups of cooked rice (Preferably take any rice other than Basmati)
Salt to taste
2 tbsp of lemon juice (or adjust as per taste)
First dry roast peanuts and keep aside, ensure peanuts are properly roasted.
Next, take a wok or pan and start the gas on high-medium flame. Add oil to it and wait for few seconds so that pan and oil is heated. For tampering, slowly add one by one mustard seeds, cumin seeds, urad daal and curry leaves to the pan. It will splutter a bit then add asafoetida and turmeric powder. Next goes dry red chillies along with dry roasted peanuts to the pan.
Mix everything thoroughly (roast till rawness of turmeric powder goes away but don’t burn the seeds, so careful!!) then add cooked rice. Toss everything together so that rice absorbs all flavours of tampering. Close the lid and cook for 1-2 minutes on medium-low flame. Don’t overcook it else rice will turn soggy.
Last step to drizzle the lemon juice and chopped fresh coriander leaves. Lemon rice is ready to serve 🙂
