Egg Drop Curry

Egg drop curry, another recipe I have learned from my mother but I have done slight changes to it. Usually Coconut base is used for this curry, instead I used onion & tomato paste as base. In this method of egg curry we don’t boil eggs separately rather drop them in the curry and let them cook with the gravy. Thus, this recipe is called as Egg Drop Curry. Also, as eggs gets cooked with all the masala’s, this curry tastes yummy & delicious.

4 eggs

1 medim sized onion

2 medium sized tomatoes

1/2 inch ginger

2 garlic cloves

2 green chillies

1 bayleaf

1 star anise

2 tbsp oil

1 tsp coriander powder

1 tsp red chilli powder

1/2 tsp turmeric

1/2 tsp cumin powder

1 tsp garam masala

2-3 cups of water

salt to taste


Take a pan on a medium flame and add 1 tbsp of oil. Once oil is heated, add roughly chopped onion, saute it for couple of minutes and then add roughly chopped tomatoes. Let onion and tomatoes cook properly, onion will turn translucent then add garlic and split green chillies. Saute everything for couple of minutes. Then switch off the gas and let is cool down to room temperature.

Now take the above mixture in a grinder jar, add ginger and water to it. Grind this mixture to form a thick paste, do not add too much water else it will turn watery. Refer second picture for paste consistency.

Remaining steps are very easy!! Turn on the gas on medium flame, take a pan and add 1 tbsp of oil. Once oil is heated add bayleaf and star anise. Saute a bit in hot oil then slowly add onion, tomato paste into it. Add 2-3 cups of water and let it cook for 5 minutes. This is our egg curry base, it will start changing the colour in few minutes. When it is hot, we need to break the eggs directly into curry. Once eggs are added, let the curry cook for another 7-10 minutes. At the last add garam masala to the curry. You can keep the lid on and let it cook on medium flame. After 10 minutes, our egg drop curry is ready to serve. You can enjoy it with chapati/roti or rice, it goes well with everything !!
