Jackfruit is a very popular fruit in India available during Summer season. It is hard in texture from outside but soft & sweet from inside. Usually, we eat yellow fleshy part around the seeds but the seeds are also edible when boiled or roasted. This curry with Jackfruit seeds and red split lentils tastes delicious as seeds give the curry a sweet & nutty flavour.
15-20 seeds of ripe jackfruit
1/2 cup split red lentils
1 medium sized onion
3-4 garlic cloves
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp garam masala powder
1 tsp coriander powder
1/2 tsp mustard seeds
1/2 tsp cumin seeds
4-5 curry leaves
1 tbsp oil
Salt as per taste (approximately 1&1/2 tsp)
Water as per requirement
Wash jackfruit seeds thoroughly and remove its white shell. Slightly break or give a slit to each seed (might need to use something heavy to get this done).
Wash and soak red lentils in water around 30 minutes. Red lentils does not need much time for cooking, so 30 minutes soaking should be good.
Take a Kadhai or Wok on a medium-high gas flame, add oil to it. When oil is hot, add mustard seeds. Once mustard seeds start spluttering; add cumin seeds, curry leaves and stir for a minute. Add finely chopped onions, garlic and mix everything well. Once onions starts turning translucent, add jackfruit seeds and stir well.
Its time to add the masala ingredients (turmeric, coriander, red chilly powders) to the pan and let it cook well. Add little water to avoid burning of masala. When masala is cooked (it will take 3-4 minutes); add the soaked lentils. Add water and let lentils cook with masala & seeds.
Add sufficient water to allow seeds and lentils cook properly. Finally add the garam masala, stir well & let it cook. Adjust the consistency of curry as per requirement, I prefer thick curry to enjoy with rice. Cook until you’ll get nice boil to the curry which takes another 15- 20 minutes & your Jackfruit seeds curry is ready.
