One Pot Chicken Pulao

One pot recipes are so easy and convenient to cook, you just need to mix everything in a single pot and your meal is ready. And if it’s a chicken recipe then nothing like it!!

Chicken is my personal favourite meat and especially enjoy the chicken gravy with rice. Though I like to eat breads or chapati as accompaniment to gravy but my priority always goes to rice dish. Thus I love to make this one pot chicken pulav as it satiates my cravings having chicken with rice. It’s just perfect for a busy workday or when you are in hurry. This recipe doesn’t need much time in preparation, all you need to do is soak the rice and marinate the chicken just 30 minutes prior to cooking. And then cook everything together. As chicken cooks quickly, this recipe will be ready within an hour. A perfect Chicken pulav with bursting flavours, ready to be served!

Ingredients:

500 gms of Chicken

1&1/2 tsp coriander powder

1/2 tsp turmeric powder

1 tsp chilli powder

1 tsp kashmiri chilli powder

1 tbsp garam masala or biryani masala

1 tbsp ginger garlic paste

1 tsp cumin seeds

2 bay leaves

2 black cardamom

1 star anise

Cinnamon stick (2 pieces of inch long)

2 dry red chillies

1 large or 2 medium sized sliced onions

2 green chillies

2-3 tbsp ghee

1-2 cups of water

2 cups of basmati rice

Few strands of saffron soaked in hot milk

Salt as per taste

Coriander and mint leaves as per taste

Method:

Marinate chicken pieces with dry spices ( turmeric, coriander, chilli powders) and ginger garlic paste, salt for 30 minutes (if you could marinate for 3-4 hour then it will be great).

Soak basmati rice in water for 1 hour or at least 30 min.

Take a wok on medium-high flame and add 2 tbsp of ghee, once it is hot, add sliced onions and stir it. Add whole spices ie, cardamom, bay leaves, cinnamon, star anise and cumin seeds along with dry red chillies to the wok. Once onions turns translucent, add marinated chicken to it. Mix everything well, cover the wok and let it cook for couple of minutes. Then add soaked rice on top along with 1 cup of water. Also add salt as per taste.

Cover the wok and turn gas to medium low flame and let it cook.

When rice is half cooked, mix everything well to ensure chicken is not sticking to the pan. Add garam masala/ biryani masala on top along with slit green chillies, freshly chopped coriander and mint leaves. Drizzle some ghee on top. Again cover the pan & cook on low flame until rice is completely cooked.

Adjust water as per requirement but do not add too much else rice will overcook. Make sure to cook on low flame once the rice is added which will make sure it does not stick to the pan. You may also keep checking in between just to ensure it is not sticking to the bottom of pan.

Finally, add saffron on top and garnish with chopped coriander leaves.
