Kobichi Wadi

Cabbage fritters or ‘Kobichi Wadi’ as we call it in local language is a snack recipe from India. Though it is not very famous like Aluwadi(colacasia rolls) or Kothimbir(coriander) Wadi but tastes super yummy. One can enjoy it as side dish with main meal or perfect as a tea-time snacks. This is not just vegetarian but also vegan friendly so everyone can enjoy it ๐Ÿ™‚

At my home we usually make stir fried cabbage preparations which goes as side dish with dal-rice or with chapati. Personally, I don’t enjoy usual cabbage preparations but these fritters are exceptional. I love to make and eat these fritters, they are super easy and delicious. And you can prepare it in advance, store it in fridge and relish whenever you want. It has slight earthy-meaty taste and tastes best with tomato ketchup ๐Ÿ‘๐Ÿผ

I have tried this recipe with chinese cabbage but it works equally well with normal cabbage as well. Use entire cabbage, as it will wilt further and you’ll get approximately 20 fritters depending on size of cabbage.

Ingredient:

1 whole cabbage

2 tbsp ginger garlic paste

1 cup gram flour/ besan

1/2 cup sorghum flour (incase want to avoid, replace with gram or rice flour)

1/2 cup rice flour

1&1/2 tbsp red chilli powder

1/2 tbsp turmeric powder

1/2 tbsp kashmiri chilli powder

1 tbsp garam masala powder

1&1/2 tbsp coriander powder

1/2 tbsp carom seeds (optional)

1/2 tbsp sesame seeds (optional)

Salt as per taste

Oil for frying

Method:

First wash the cabbage and shred it into fine slices. Into this shredded cabbage add all dry spice powders and ginger-garlic paste. Add flours along with carom seeds. (P.S. I have used dry powders in tbsp measurement in proportionate with large cabbage. You can adjust the spices as per cabbage size.) Mix everything and keep it aside for 10-15 minutes.

Do not add water, as cabbage has its own moisture which helps in binding.

Next we will start preparation for steaming. Take a plate and grease it, roll the mixture on the greased plate. Boil the water in steamer and once water is boiled, steam the mixture for 15-20 minutes. Cool it down to room temperature. Insert the tip of knife into the steamed mixture and if it comes out clean then fritters are properly steamed.

Cut the fritters into pieces as per choice. You can immediately shallow fry it or can save it fridge for later. These fritters can be stored in fridge 5-6 days but try to use it within 2-3 days only.

Whenever you wish to eat, shallow fry it on medium-high flame until golden brown from both sides. If you prefer deep fried then fry these fritters on medium flame. My personal choice is shallow fried and serve with ketchup. Optionally, while frying you can add some sesame seeds over the top.

Cabbage fritters are ready to serve. Serve it with some ketchup or chutney or as side dish with main meal.
