Alphanso Aamras Recipe !!

Aamras which literally means mango juice and this name is derived from sanskrit words : aam (mango) & ras (juice). Aamras is an Indian recipe prepared using alphanso variety of mangoes. Alphanso is a seasonal fruit available mid april through end of june. This variety is very famous in India and expensive as well. Alphanso is mainly grown in Konkan region of western India. And nowadays they are available even in foreign countries during the season.

This golden yellow beauty has very creamy, juicy and sweet taste. And that’s why if you once tastes alphanso you won’t like any other variety of Mangoes. In this blog, I am going to share my recipe fo Aamras. As per traditional recipe, aamras is a pure mango pulp and no need to add any sugar or milk. That is why only alphanso is perfect for this recipe. We are not making a milk shake so there is no need of milk or sugar in the recipe ๐Ÿ˜œ

Recipe is very simple but little messy and tastes yummy so its worth to try it. Aamras is naturally sweet with thick consistency. Typically, it is served with puris but you can relish it on its own as a dessert.

I am using 4 ripe alphanso for this recipe and it will yield around 4 bowls of aamras.

Ingredients:

4 ripe alphanso

1 tsp cardamom powder

Few strands of saffron (optional)

1/2 cup of water (optional)

Method:

Wash alphanso and press it gently from all sides with hands. By doing this, its pulp will loosen up. You can refer below images.

Once alphanso’s are soft, remove the black tip and squeeze out the pulp in the bowl. This pulp will easily come out. Then you can remove the skin to get remaining pulp and throw away the seed. Extract all pulp carefully.

Collect all the pulp and whisk it. You can also use blender or mixer to make a smooth pulp. If you feel its too thick then add little water while blending. Aamras is a thick pulp so don’t make it watery.

Final step is to add cardamom powder and saffron. Mix it well and keep in a fridge to chill. Enjoy it with hot puri or as a dessert ๐Ÿ˜

Since alphanso is a seasonal fruit, you can extract the pulp(without water) and freeze it. That way you can enjoy the aamras throughout the year. Also, use good variety of alphanso and please do not try any other mango variety for aamras. Alphanso is naturally sweet and juicy thus its best for this recipe and traditionally aamras means alphanso only.
