Batata Rassa Recipe | Easy one-pot potato gravy

Batata Rassa

Batata Rassa‘ is a one-pot easy, super quick potato gravy recipe which is perfect for busy day. This gravy is spicy with hint of sourness and goes best with puri, paratha, chapati or bread. Recipe is straightforward which requires staple ingredients from Indian kitchen. I use pressure cooker for the recipe and it really saves lot of time. Incase, you don’t have a pressure cooker, use boiled potatoes instead.

I often make this batata rassa for weekday lunch; serve along with chapati. And we enjoy leftover rassa for next day breakfast with bread to mop all the juices.

I this post, I am sharing step by step recipe of ‘Batata Rassa‘. In my version, I used potatoes and onions but one can add tomatoes or green peas also. Green peas is one my favourite addition in the recipe. Also, I have used amchur powder to add that subtle tangy taste but one can use chaat masala instead. All in all, it’s a perfect comforting homestyle recipe !!

Batata Rassa

Ingredients:

5 medium potatoes

1 small onion

1 tbsp oil

1/2 tbsp ginger-garlic paste

1 tsp mustard seeds

1/2 tsp turmeric powder

1/2 tsp kashmiri chilli powder

1 tsp chilli powder

1 tsp coriander powder

1 tsp amchur powder

Salt as per taste

4-5 cups of water

Method:

Peel off potatoes and wash them. Roughly dice potatoes and soak into water.

Next, finely chop the onion.

Heat the pressure cooker on high heat and add oil into it.

Once oil is hot, add mustard seeds and let it sizzle for few seconds.

Tip in chopped onions into the cooker. Turn heat to medium. Stir onions about 3-5 minutes, or until softened.

Add ginger-garlic paste into the cooker. Mix together, cook for 2 minutes.

Next goes in powder spices one by one. Gently mix everything together. Allow to cook until raw smell of spices goes off.

Add few drop of hot water to deglaze the bottom of cooker.

Now time to add potatoes into the pan. Let them coat in the spicy mixture.

Season with salt and add enough water to cover potatoes. Then pressure cook until 3 whistles.

(If you are not using pressure cooker then add dices boiled potatoes at this stage. Add water and adjust it to required consistency.)

After 3 whistles, turn the heat off. Allow the cooker to stand and open it once cool down.

Simmer the gravy on low heat for 5 minutes. Potatoes are soft while gravy is thickened by now.

It’s perfectly ready to serve hot.

Check the seasoning and if liked, sprinkle some fresh coriander over top. Serve hot with your favourite accompaniment.
