This bright crimson red ‘Beetroot Salad’ is an excellent recipe and one of my favourite. This salad is not just healthy but full of flavours. I must mention that, growing up, I as was not fan of beetroot but now I indulge it. And I love this recipe which I inherited from my Mother. Btw, my mum cooks the best food in entire world 😍 and she shared her salad recipe with me.
Raw, unboiled beetroot is used in this salad which is sweet in taste. Using raw means it does not lose any nutrients and adds lovely crunch to the salad. Mixed with peanut powder, green chillies and red onions with drizzle of lemon and seasoning. So overall it has crunch with sweet-sour taste and subtle heat from chillies. Recipe is easy, no rocket science 🙂 and can be ready under 15 minutes. Prepare it fresh and serve as a side dish or enjoy on its own.
1 raw beetroot
1/4 red onion
1 green chilli
1 tbsp lemon juice
3-4 tbsp roasted peanut powder
1/2 tsp sugar
Salt as per taste
Wash and peel off the beetroot. With the help of grater box, grate it medium or coarsely. I do not prefer fine grating as sometimes it turns mushy and watery.
Very little red onion is required for this salad, so it won’t overpower its taste. I have used just 1/4 finely sliced onion here.
Mix finely chopped onions with the beetroot.
Next add peanut powder into the salad bowl. To make peanut powder at home, dry roast the peanuts and then coarsely ground it. I always like to keep it handy, adding peanut powder into salad or stir fried veggies gives lovely crunch to it.
Next, finely slice the green chilli and add into the bowl. You can adjust chillies as per taste.
Finally drizzle lemon juice and season with salt and sugar.
Mix together gently and salad is ready !
Beetroot is a ‘Superfood’ as its nutritious and beneficial for health. This crunchy salad is part of our regular meals and like to serve it with dal-rice and chapati.
