Chutney Sandwich Recipe

This pleasing Chutney Sandwich is one of the easiest one can ever make. You simply need bread, butter and green chutney to make these amazing sandwiches. This green chutney is super delicious and prepared with handful ingredients. It has nutty taste of coconut with slight spiciness and hint of sweet and tangy taste from sugar and tamarind respectively.

Ingredients
  

  • 10-12 nos white bread slices
  • 1/2 cup coconut chunks
  • fresh coriander handful
  • butter as required
  • 1 no green chilli
  • 1 no garlic clove
  • 1 small ball tamarind
  • 1/2 tsp cumin seeds
  • 1/2 tsp sugar
  • salt as per taste

Instructions
 

  • Gather all the ingredients.
  • Take a blender jar and tip in everything except coriander leaves. (I like to blend chunky coconut first as it takes time and then add coriander. It's just personal preference.)
  • Turn on the blender and make a thick paste. Add water if required but use minimum amount; we don't want watery chutney.
  • Next add coriander leaves into blender jar and blitz it together. Make a fine thick paste and our chutney is ready.
  • Take bread slices and remove its crust. This step is optional and if you prefer to keep them, feel free to do so.
  • Apply generous amount of butter to one side of bread. Then apply chutney to other bread on one side.
  • Arrange breads one upon the other; chutney and butter sides facing each other. You can cut it into triangle or rectangle. Chutney sandwich is ready to serve.

Notes

  • You can store this chutney in the refrigerator for 2-3 days. It also freezes well and can be used within 8-10 days. Once defrosted, do not re-freeze it.
  • Use lime juice instead of tamarind to add tangy taste.
  • Use no or minimal water while grinding the chutney.
  • You can also add some stuffings like cucumber, tomatoes, potatoes to make a hearty meal.
  • Brown bread can also be used instead of white.
