
This pleasing Chutney Sandwich is one of the easiest one can ever make. You simply need bread, butter and green chutney to make these amazing sandwiches. The green chutney is super delicious and prepared with handful ingredients. It has nutty taste of coconut with slight spiciness and hint of sweet and tangy taste from sugar and tamarind respectively. Spread generous amount of butter and chutney on soft bread slices and club them together; its that simple !!
Chutney sandwiches are perfect for kids lunch box or can be enjoyed for picnics, parties too. I often prepare it for breakfast or as evening snack with cup of black tea. These sandwiches are not just easy but hearty and delicious as well. You can make ahead this green chutney and store it in the refrigerator. So these fuss-free sandwiches can be ready in no time.

Ingredients:
10-12 White bread slices
1/2 cup fresh coconut chunks
Handful fresh coriander
Butter
1 green chilli
1 garlic clove
1 small ball sized tamarind
1/2 tsp cumin seeds
1/2 tsp sugar
Salt as per taste

How to make:
Gather all the ingredients.
Take a blender jar and tip in everything except coriander leaves. (I like to blend chunky coconut first as it takes time and then add coriander. It’s just personal preference.)
Turn on the blender and make a thick paste. Add water if required but use minimum amount; we don’t want watery chutney.
Next add coriander leaves into blender jar and blitz it together. Make a fine thick paste and our chutney is ready. (Test the taste and adjust seasonings if required.)



Take bread slices and remove its crust. This step is optional and if you prefer to keep them, feel free to do so.
Apply generous amount of butter to one side of bread. Then apply chutney to other bread on one side.
Arrange breads one upon the other; chutney and butter sides facing each other. You can cut it into triangle or rectangle. Chutney sandwich is ready to serve.



This chutney sandwich tastes good with tea or coffee. I love to enjoy my sandwich with cup of black tea.
Leftover chutney can be enjoyed as sides with dal rice. Or you can also serve this chutney with idli, dosa etc.
This chutney can be stored in the refrigerator for 2-3 days. It also freezes well and can be used within 8-10 days. Once defrosted, do not re-freeze it.

- Use lime juice instead of tamarind to add tangy taste.
- Use no or minimal water while grinding the chutney.
- You can also add some stuffings like cucumber, tomatoes, potatoes to make a hearty meal.
- Brown bread can also be used instead of white.Β

Why do we cut the brown edges of the bread?

I know but I prefer soft bread without any crust for sandwich. Crust goes well in toasties sandwich.
I reuse bread crusts to make croutons, so there is no wastage of bread !!

Make croutons by tossing into hot neutral oil with some seasonings.
