Indian style Baked Chicken Recipe

This Baked Chicken is super simple with bunch of Indian spices and it requires minimal supervision. The chicken is juicy, spicy and aromatic; pair is with your favourite bread or rice which makes a perfect meal.

- 500 gms chicken drumsticks and thighs pieces
- 1 tbsp mustard oil
- 1 tbsp ginger garlic paste
- 1/2 tsp turmeric powder
- 1/2 tsp chilli powder
- 1/2 tsp kashmiri chilli powder
- 1 tsp coriander powder
- salt as per taste
- lime juice to drizzle
- chopped coriander to garnish
Wash the chicken and cut it into required pieces. I prefer to use readymade drumsticks and thigh pieces.
Make few gashes to it but not too deep.
Season the chicken with spices and ginger-garlic paste. Also, add few drops of oil while seasoning.
Keep marinated chicken aside for 3-4 hours.
Preheat the oven to 180 degree celsius.
Meanwhile, grease the baking tray and arrange marinated chicken pieces over it.
I generally, sprinkle some freshly chopped coriander over the top but its completely optional.
Once oven is pre-heated, transfer the chicken to middle rack and bake for around 45-50 minutes at 180 degrees. You can check after half time and flip the chicken pieces.
Bake them as per the given time or until golden brown.
Baked chicken is ready to serve. Garnish with fresh coriander leaves. Drizzle some lime juice over it and serve hot with salad or your choice of accompaniment.
- Use either whole chicken or readymade drumsticks and thigh pieces.
- I prefer to use few pieces with skin-on. Once baked, fat is released which makes them greasy. This not just adds flavours but makes them juicy.
