Indian style Baked Chicken Recipe!!

Baked Chicken

Baked Chicken is one of my go to recipes when I crave for some spicy and delicious food. Recipe is super simple with bunch of Indian spices and it requires minimal supervision. This chicken is juicy, spicy and aromatic; pair is with your favourite bread or rice which makes a perfect meal. It is a low effort, crowd-pleaser recipe and perfect for house parties. Make big batch in advance and can be reheated to feed guests.

You can use whole chicken for this recipe; ask the butcher or if you can cut them into separate pieces. I prefer to use readymade pieces like drumsticks or thighs. Also, add few pieces with skin-on; it releases fat when baked and adds rich flavours. Marination is one important step here, allow chicken to marinate for 3-4 hours. This way; seasonings will beautifully marry with chicken pieces and enrich the flavours. Once baked, drizzle some lime juice and serve it hot.

Baked Chicken

Ingredients:

500 gms chicken

1 tbsp oil (use any oil, I use mustard oil)

1 tbsp ginger garlic paste

1/2 tsp turmeric

1/2 tsp chilli powder

1/2 tsp kashmiri chilli powder

1 tsp coriander powder

Salt to taste (Approx need 1 tsp)

Chopped coriander leaves (optional)

Lime juice to drizzle (optional)

(Proportion for 1-2 persons)

Method:

Wash the chicken and cut it into required pieces. I prefer to use readymade drumsticks and thigh pieces.

Make few gashes to it but not too deep.

Season the chicken with spices and ginger-garlic paste. Also, add few drops of oil while seasoning.

Keep marinated chicken aside for 3-4 hours.

Preheat the oven to 180 degree celsius.

Meanwhile, grease the baking tray and arrange chicken pieces over it.

I generally, sprinkle some freshly chopped coriander over the top but its completely optional.

(Tip- I prefer to use few pieces like thighs with skin. Once baked, fat is released which makes them greasy. This not just adds flavours but makes them juicy.)

Once oven is pre-heated, transfer the chicken to middle rack and bake for around 45-50 minutes at 180 degrees. You can check after half time and flip the chicken pieces.

Bake them as per the given time or until golden brown.

Baked chicken is ready to serve. Garnish with freshly chopped coriander.

Drizzle some lime juice over it and serve hot with salad or your choice of accompaniment.
