Chicken Rassa

Chicken rassa is a home style chicken gravy usually prepared in western coastal region of Maharashtra, India. Gravy is prepared using coconut and onion paste which is packed with full of flavours. You can store this coconut-onion paste in the freezer and can be used for another 15 days. So if you have paste ready then its a perfect recipe for busy days.

Chicken rassa tastes awesome with rice but one can enjoy it with bread/chapati or even with bhakri. Checkout the recipe below and I hope you’ll love this traditional recipe!!!

Ingredients:

500 gms Chicken

2 Large Onions

1/3 cup grated coconut

2 tbsp ginger garlic paste

4 tbsp oil

1/2 tsp turmeric powder

1&1/2 tsp coriander powder

1 tsp kashmiri red chilli powder

1 tsp red chilli powder

1 tsp garam masala/ chicken masala

Salt as per taste

Method:

Wash and cut the chicken as per choice. Marinate chicken with 1 tbsp ginger garlic paste and turmeric. Keep it aside for minimum 30 minutes.

Next, we’ll prepare coconut and onion paste. Heat the pan and 2 tbsp oil when pan is hot. Add roughly chopped 1 large onion to hot oil. Keep stirring onions until it turns translucent. Then add freshly grated coconut to it. Stir the mixture continuously till coconut turns brown. Take pan off the flame and let it cool to room temperature. Grind this mixture to fine thick paste with minimum water.

Take a wok/pan on a medium-high flame. Once pan is hot, add 2 tbsp of oil to it. Add 1 finely chopped large onion to hot oil. Stir the onion for couple of minutes and then add 1 tbsp of ginger-garlic paste. Stir continuously and add dry spices with salt to it. Keep stirring and add very little oil to ensure spices won’t get burnt. Once onions turns translucent, add marinated chicken into it.

Mix everything properly on medium heat. When chicken is 50% cooked, add coconut-onion paste into pan. Add around 1 cup of water to the pan, cover and let it cook. Oil will starts separating out, then add chopped coriander and cook for another 5 minutes. Adjust the thickness of gravy as per choice but usually rassa/ gravy is not very thick.

Switch off the gas and garnish with chopped green coriander (optional but I like it). Chicken rassa is ready to serve. Serve it with any kind of bread/ roti and rice. Drizzle some lime juice while serving, it will enhance the flavours.
