
Vermicelli kheer is an Indian pudding which is also called as ‘Shevai kheer’ in local language. You can find different recipes of kheer in different states of India. We Indians have variety of desserts for every occasion or festivals and Vermicelli kheer is one of the most common, easy to make dessert.
I thought of giving little twist to the original kheer recipe with rose flavour which makes it cool and refreshing.
You can use readymade roasted vermicelli for this recipe or if that’s not available then first roast 1/4 cup vermicelli in 1 tbsp ghee/ clarified butter for 3-4 minutes. I have used readymade roasted vermicelli which saved my time.
Below recipe will yield 4-5 cups of rose vermicelli kheer.
Ingredients:-
4 cups of milk
1/4 cup of roasted shevai/ vermicelli
4 tbsp sugar
2 tsp rose water
1 tsp pink food colour (optional)
1 tbsp dried rose petals
2 tbsp almond flakes/ chopped almonds
Method:-
Boil the milk on medium-high flame. Once milk starts boiling add roasted vermicelli, sugar and chopped almonds into it.
Mix everything well and continue cooking it together. Stir it occasionally to ensure it doesn’t stick to the bottom of pan. I don’t prefer too much sweetness so used 4 tbsp sugar but you can adjust it as per your taste.
Switch the flame to low-medium and continue heating until vermicelli’s are cooked completely. I usually add almonds/ dry fruits along with vermicelli, as I don’t prefer frying them separately. And dry fruits gets cooked along with vermicelli in the milk.But if you like fried ones, then take dry fruits of your choice and cook them in ghee/clarified butter; proportion could be 2 tbsp dry fruits in 1 tbsp ghee. Then add fried dry fruits on top of kheer.
Thickness of kheer can be adjusted as per choice. Once vermicelli’s are cooked and required thickness is achieved, turn off the gas and bring it to the room temperature. Add rose water, dried rose petals and food colour to it. Mix thoroughly and store it in fridge to chill. Serve it chilled as side dish or dessert!!
