Maharashtrian style Batatyachi Bhaji !!

Batatyachi Bhaji

Batatyachi Bhaji‘ is a simple preparation with parboiled potatoes. This side dish is a household recipe of Maharashtrian cuisine. And it is one of the favourite dish for special occasions like weddings, festivals etc. No meal is complete without yellow batata bhaji and typically it is served with hot puris along with Shrikhand and Dal-rice.

For my family, we don’t need special occasions rather we devour this dish on regular days as well. It requires simple ingredients, readily available at home and that’s one of the reason it is household favourite recipe.

In my recipe, I love to add some extra onions and ginger. Also, I prefer sliced rather than finely chopped onions. And then thoroughly cook these onions, it gives amazing taste to this dish. Of course, curry leaves, asafoetida and fresh coriander further enhances flavours. Serve it with hot phulka or chapati & it makes a happy happy meal.

So let’s quickly jump to the recipe !!

Ingredients:

2 big size potatoes

1 big onion

2 green chillies

2 tbsp oil (mustard oil is preferred)

1 tsp mustard seeds

1 tsp cumin seeds

1/2 tsp urad dal

1/2 tsp asafoetida

1 tsp turmeric powder

1/2 tbsp ginger paste or julienne of fresh ginger

Few fresh curry leaves

Salt to taste

Fresh coriander leaves for garnishing

Method:

Wash the potatoes and boil it in pressure cooker until 2-3 whistles (add pinch of salt while boiling). If you don’t want to use cooker then boil the potatoes in salt water. Just parboil the potatoes, don’t overcook it.

In the meantime, slice the onions and roughly chop the green chillies. Once boiled potatoes are ready, cool down to room temperature and remove the skin. Roughly chop the boiled potatoes.

Heat the oil and add mustard seeds, cumin seeds, fenugreek seeds into it. Next add curry leaves along with asafoetida into the pan. It will release aroma and then add sliced onions along with green chillies.

Add turmeric powder and ginger paste into the pan. Mix everything thoroughly and cook until onions are translucent.

Next we are going to add boiled potatoes into the pan along with salt. And Mix Mix Mix !!!

Cover it and cook it further for few minutes while stirring occasionally. Adjust the salt as per taste. And finally garnish with fresh coriander leaves. Our ‘Batata Bhaji’ is ready to serve.

Though Puri is a perfect companion for batata bhaji, one can serve it with phulka, chapati or even paratha. Also, this makes a perfect stuffing for sandwiches and goes well with dosa’s. So you know how to use your leftover bhaji 😊
