
Finger millet which is commonly known as nachani or raagi has zillions of health benefits. This tiny, red coloured millet is recommended to include in your daily diet. If you consider Indian cuisine, there are number of recipes using raagi as main ingredients. And one such recipe is Nachani Satva which is nothing but a kind of pudding prepared using finger millet. Usually, it is considered as baby food due to its nutritional benefits but even adults can enjoy it.
In this post, I am going to share detailed recipe of Nachani Satva. One can prepare this and store it in fridge to consume in next 2 days. This is one of the best way to enjoy finger millet to absorb its health benefits.
Ingredients:
1 cup finger millet
1/2 cup shredded jaggery
1 cup fresh coconut milk
1/4 cup roasted unsalted peanuts
1 tsp cardamom powder
1 cup water (for soaking)
Salt as per taste
Method:
Wash finger millets thoroughly and soak in water for 4-5 hours. Grind soaked millets to a fine paste and strain through muslin cloth. Store this millet paste overnight in fridge.



Next day, some liquid will separates out from top of the stored paste. Partially remove this liquid and keep remaining grounded paste.



Next, get started with remaining ingredients. Coarsely grind roasted unsalted peanuts. Add grated jaggery, coconut milk and peanuts to the millet paste. Mix everything thoroughly and transfer it on a medium-low flame.




Keep stirring continuously on a low flame so that jaggery is completely dissolved. Continue cooking on a low flame until it starts thickening. Add cardamom powder into it. As it starts thickening, it will turn wobbly and changes the colour in minutes.
Once it achieves pudding like semi thick consistency, switch off the flame. Transfer it on a plate and allow to cool down at room temperature.





Cut it into desired shapes and Nachani Satva is ready to serve. You can store it in fridge upto 2-3 days.
