
This Cucumber Salad is a light and refreshing recipe that is typically served as a sides. Simple handful ingredients like yogurt, peanuts (my favourite) along with cucumber, salt-sugar goes into this salad. You may find versions of Indian cucumber salad with few changes here and there. In this post I am sharing my recipe which we typically prepare at home.
Recipe is super quick, easy and perfect for summers. Though I have used english cucumber for this salad; any variety works perfectly. And you might want to peel the skin off if it’s too thick. Roasted peanut is a brilliant ingredient which really goes well in any salad recipe as it adds nutty and earthy flavours. I have added plenty of it along with thick curd, some salt and sugar. To add more freshness; I always prefer to use fresh coriander which is totally optional. Serve chilled or at room temperature with your meal. Such a humble recipe that can be ready under 15 minutes while bursting with freshness and joy ๐

Ingredients:
1 small or 1/2 large cucumber
3/4 cup thick plain curd or yogurt
1-2 tbsp roasted peanuts
1-2 tsp sugar
1 tsp salt (adjust as per taste)
Fresh coriander leaves

How to make:
Wash and grate the cucumber. If required you might need to peel the cucumber before grating. I am using english cucumber which has soft skin, so peeling doesn’t required.
Take a mixing bowl and add grated cucumber into it.
Pour thick yogurt into the mixing bowl and gently mix together. As cucumber releases its own moisture; thick yogurt or curd is preferred in this recipe. So that salad won’t be runny or thin in consistency.


Coarsely grind roasted peanuts and tip into mixing bowl. You can use all of it or adjust as required.
Finally add salt and sugar into the bowl. Mix everything well and salad is ready to serve.



I like to add freshness of coriander into this salad. So I also add finely chopped coriander into the mixing bowl.
You can chill this cucumber salad into the refrigerator before serving.
Cool and refreshing Kakadi Koshimbir or Cucumber Salad is ready.


Serving Suggestions: Serve it as sides with dal-rice or roti-sabji (chapati). In Maharashtra, we often enjoy this cucumber salad on fasting day along with Sabudana Khichdi or Sabudana Vada.

Kakadi Koshimbir | Indian Cucumber Salad
Ingredients

- 1 tsp salt adjust as per taste
- fresh coriander optional
Instructions

- Pour thick yogurt into the mixing bowl and gently mix together.

- Finally add salt and sugar into bowl. Mix everything well and salad is ready to serve.
- Optionally, you can also add finely chopped fresh coriander at the end.
- Cool and refreshing Kakadi Koshimbir or Cucumber Salad is ready. (Serve it chilled or at room temperature)
Notes
- As cucumber releases its own moisture, use thick curd or yogurt in this recipe. So that salad won’t be runny or thin.
- I prefer to use homemade roasted peanuts. For which I roast raw peanuts over medium-low heat until it turns brown and dry.
- This salad can be served as side dish and goes really well with sabudana khichdi or vada.

Yes itโs kind of raita, a regional recipe from Maharashtra state. Just cucumber with some peanut powder !!
