Tomato Rice

Tomato Rice

This is another quick and easy recipe for lunch or dinner. You can serve tomato rice along with pickle and papad, it tastes amazing. You can also serve curd or any raita with it šŸ™‚

Ingredients:

4 cups of cooked white rice

1 big/ 2 medium sized finely chopped onions

4 big sized finely chopped tomatoes

2 small green chillies

8-10 curry leaves

1 tsp mustard seeds

1 tsp cumin seeds

Pinch of asafoetida

1 tsp turmeric powder

1 tsp kashmiri red chilli powder

1/2 tsp red chilli powder

1 tsp coriander powder

2 tbsp oil

Salt as per taste or about 2 tsp salt

Fresh coriander leaves for garnish (optional)

Method:

Take a pan and keep it on medium high flame. Once pan is heated, add oil to it. When oil is hot, add mustard seeds to it. As mustard seeds starts spluttering low the gas flame and add cumin, curry leaves, asafoetida.

Add chopped onions to it and again turn gas to medium flame. Stir onions properly and add chopped green chillies, turmeric, red chilli, kashmiri red chilli, coriander powder to it. Stir everything properly, you can add little water so that masala’s won’t get burned. Add salt to the pan and let all masala’s cooked with onions, it will take 3-4 minutes.

Now, add chopped tomatoes to it and mix everything well. Let tomatoes cook with all masala’s. Tomatoes will turn mushy once they cooked. Now add cooked rice to the pan, you can use basmati or any rice. Mix everything well, close lid of the pan. Turn gas to low flame and let it be for 4-5 min. After 5 min switch off the gas and tomato rice is ready. You can garnish it with chopped coriander leaves.
