Tomato Chutney

This bright Tomato Chutney is an excellent side dish using finely diced tomatoes and onions. Actually; it is a kind of stir fried sabji but commonly known as chutney in Maharashtra, India. Tangy, sweet and mildly spicy sides that goes really well with plain paratha. It is one of the basic and beginner friendly recipe; so it’s simple and quick with staple ingredients from Indian kitchen. Preferably use sweet and juicy tomatoes to make this chutney extra delicious. Serve it warm and fresh with your favourite accompaniment like paratha, chapati or dal-rice and some salad on side.

Tomato Chutney

Ingredients:

5-6 medium sized tomatoes

1 onion

1 tbsp oil

1 tsp garlic paste

1 tsp ginger paste

1/2 tsp mustard seeds

1/2 tsp cumin seeds

1/2 tsp turmeric powder

1 tsp red chilli poeder

2 tsp coriander powder

1 tsp garam masala

1 tsp sugar

Salt as per taste

Handful fresh coriander

Water for cooking

How to make:

Gather all the ingredients for cooking.

Finely chop onions and tomatoes. I prefer to use hand chopper, as it really helps to finely dice the vegetables.

Take a pan or kadhai over high heat and add oil into it.

Once oil is hot, tip in mustard seeds and it will start to splutter in hot oil. Also, add cumin seeds into the pan and let it crackle for couple of seconds.

Turn heat to medium and tip chopped onions into the pan. Stir well until onions starts changing its colour.

Next add ginger and garlic paste into the pan. Mix everything well and cook over medium heat for another 2-3 minutes.

Add powdered spices like turmeric, red chilli, coriander powders along with salt.

Give a quick stir to combine everything. You may add little hot water if mixture is too dry.

Fry over medium heat until raw smell of spices goes away and everything is well combined.

Next goes chopped tomatoes into the pan. And mix everything together.

Tomato has its own moisture; but if required add 1/4 cup of water.

Add garam masala powder along with sugar and give a quick stir. Let it cook over medium heat for 5-7 minutes.

Once tomatoes are cooked, it changes its colour and water will evaporate.

Tip in chopped coriander and mix it well.

Simmer for another 4-5 minutes. Tomato chutney or Tomato-onion sabji is ready to serve.

This tomato chutney goes really well with paratha or chapati. You can serve it along with dal-rice too.

Enjoy it warm and fresh with your choice of accompaniment.

Ingredients
  

  • 5-6 nos tomatoes medium
  • 1 no onion medium

  • 1 tsp ginger paste

Notes

  • Use sweet and juicy tomatoes for the recipe.
  • Sugar is added to balance the sour taste of tomatoes.
