Ros Omelette

Everyone loves street food and India is famous for variety of street food recipes. Ros Omelette is one of the my favourite street food. This is regional speciality from beautiful coastal state of India – Goa. Though it’s not popular in other Indian states but quite famous in Goa and you can find it at almost every local food joint. It’s a simple dish made using omelette which is dunked in spicy gravy, mostly Chicken Xacuti. And served with goan breads or rolls. Thus you can make it easily at home with your favourite spicy gravy.

Ros Omelette is simple, easy and you can modify it as per your choice. Serve it with any type of bread/rolls or you can just enjoy it on its own. In this post, I am going to share recipe of how I usually make Ros Omelette with leftover Chicken Xacuti.

Ingredients:

2 eggs

1/2 chopped onion

2 sliced green chillies

1/2 tsp garlic granules

Pinch of salt

1 tsp milk (optional)

Chicken Xacuti gravy (you can use any spicy gravy)

Oil for cooking

Some chopped fresh green coriander for garnishing

Lemon wedges (Optional)

Method:

Beat the eggs, I use 2 eggs per person which makes a fulfilling meal along with breads. Add chopped onions, green chillies, garlic granules, salt and milk into it. Mix well and let it sit aside for few minutes. This allows garlic granules to soak all the liquid. Addition of milk makes omelette soft and fluffy, so I always prefer to add it into my omelette. If you want want to add additional veggies or any meat into your omelette then feel free to add it.

Next, heat the pan and put some oil or butter onto it. Pour egg mixture onto hot pan and cook it from both sides.

Last step is assembly where we need your favourite spicy gravy. I use Xacuti which is coconut based spicy gravy. If you fancy recipe of Chicken Xacuti, it can be found on my blog 😊. Pour the gravy on top of omelette and garnish it with some chopped onions, chillies and coriander. Lastly, squeeze some lemon juice on top.I also use some chicken pieces along with gravy and serve it with freshly baked dinner rolls.

This is such an amazing and delicious recipe which makes perfect satiating brunch.
